Roses will always feature as a statement bloom in wedding flowers, which is why it’s so important to be able to recreate them on your wedding cakes. But their spiral construction and volume creates all sorts of challenges for the cake artist: how do you sculpt round petals? How do you place the outside petals of an open rose around its base? How do you get into the middle?
I’ve practiced sculpting roses for years now and while it’s not for the faint-hearted, you simply have to have them in your repertoire if you want to make sculpted buttercream wedding cakes. And they are SO beautiful, they’ll really take your cakes to the next level.
We’ll create a tumbling two tier rose cascade, which will include roses at bud, young and full stages of development, and placed at different angles. You’ll take your creation home alongside a set of the top quality palette knives that I use and my own Italian meringue buttercream recipe.
I’ll provide a light lunch, tea and coffee and there’ll be lots of cake chat. It’s a packed day but a huge amount of fun.
This class will either be held at my home in Westerham, Kent, or in our studio, which is just outside Westerham on the road into London. The venue will be confirmed closer to the date.
