Learn how to sculpt this showstopper bloom with a palette knife.

Roses will always feature as a statement bloom in wedding flowers, which is why it’s so important to be able to recreate them on your wedding cakes. But their spiral construction and volume creates all sorts of challenges for the cake artist: how do you sculpt round petals? How do you place the outside petals of an open rose around its base? How do you get into the middle?

I’ve practiced sculpting roses for years now and while it’s not for the faint-hearted, you simply have to have them in your repertoire if you want to make sculpted buttercream wedding cakes. And they are SO beautiful, they’ll really take your cakes to the next level.

We’ll create a tumbling two tier rose cascade, which will include roses at bud, young and full stages of development, and placed at different angles. You’ll take your creation home alongside a set of the top quality palette knives that I use and my own Italian meringue buttercream recipe.

I’ll provide a light lunch, tea and coffee and there’ll be lots of cake chat. It’s a packed day but a huge amount of fun.

If you want to add sculpted buttercream cakes to your repertoire, this is where to start. Not only is the peony ubiquitous throughout summer wedding flowers; its shape and structure provide the basis for most flowers with a broad petal shape.

During this class you will learn how to sculpt, pick up and apply individual petals and arrange them to create two groups of cascading bud, young and full peonies that tumble down the side of a prepped two tier dummy cake. Your cascade will be punctuated by trails of foliage and complementary filler flowers with long narrow petals. Learning to sculpt these little blooms will provide you with the technique you need to go off and create dahlias and other flowers with narrow and spiky flowers.

We will also discuss colour theory, composition and where to go for cake inspiration. I’ll provide lunch, tea and coffee and you’ll leave not only with your show-stopping creation, but a set of top quality Italian palette knives.

This class will either be held at my home in Westerham, Kent, or in our wonderful studio, which is on a farm just on Westerham Hill with fabulous views over Kent and Surrey. The venue will be confirmed closer to the date.

This is the class I get most inquiries about. Sculpting with white chocolate ganache, or chocolate cream as it is sometimes called, allows your flowers to have more volume as it is firmer than buttercream and sets hard. We use larger knives to create dramatic statement blooms that appear to grow out of the cake. Petals are formed on the board and placed with two knives. Heavy or difficult to handle shapes can be chilled before placing.

We will create a statement open peony design on a single tier dummy, framed with smaller arrangements of filler flowers and foliage. I’ll provide lunch, tea and coffee and you’ll leave not only with your show-stopping creation, but a set of my top quality Italian palette knives.

Learn to create showstopper buttercream peonies with palette knives at our beautiful studio in Westerham, Kent.

After a quick buttercream demo, we will begin practicing this absolutely game-changing technique using templates and then transfer our new skills onto the side of a two-tier dummy cake. I’ll supply two of the best quality Italian painting knives for you to use in the class you’ll use, and these are yours to take home with your beautiful creation. We’ll sculpt peonies at three stages of development and learn how to frame them with rambling filler flowers and foliage. The techniques you’ll learn will enable you to create all sorts of different flower shapes with your palette knives. You’ll be amazed at how everyone’s flowers will differ at the end of the class: individual styles evolve so quickly.

I’ll provide lunch, coffee and tea provided. The studio is in a beautiful farmyard setting with fabulous views, so we will have a break for lunch and eat outside if it’s dry, a brilliant chance to chat about equipment, suppliers, ingredients, recipes, inspiration, all sorts.

We will use a mixture of tips to pipe a variety of flowers onto cupcakes which I will have baked especially for the class. I’ll share my recipes for silky smooth and delicious Italian meringue buttercream and light- as- air cupcakes. We’ll use a piping nail and lifters to transfer flowers onto cupcakes and progress to piping directly onto a cake.
